Feel Good Spicy Cajun Pasta

Ingredients:

  • 1 pound of pasta (penne, fusilli, or any pasta of your choice)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons of Bayou Thunder spicy cajun seasoning
  • 1 can of diced tomatoes
  • 1/2 cup of heavy cream
  • Salt and black pepper to taste
  • Fresh parsley or green onions for garnish
  • 1 Pound of chicken breast or shrimp

Instructions:

  1. Cook the pasta according to package instructions in a pot of boiling salted water. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell peppers, and sauté for about 5 minutes, or until they start to soften.
  3. Add the minced garlic and sauté for an additional minute.
  4. Add the Bayou Thunder Spicy Cajun seasoning to the skillet and stir to coat the vegetables.
  5. Add the can of diced tomatoes to the skillet, stir to combine, and let it simmer for 5-10 minutes.
  6. Add the heavy cream to the skillet and stir to combine. Let it simmer for another 5 minutes, or until the sauce thickens.
  7. Add the cooked pasta to the skillet and toss to coat the pasta with the spicy Cajun sauce.
  8. Add cooked chicken breast or shrimp.
  9. Season with salt and black pepper to taste.
  10. Garnish with fresh parsley or green onions before serving.
